Don't get me started Doc.....

I love Alton to death (he is a hottie!) but I still question the whole staple thing... :P Anywho, the menu sounds good.... BUT!
1- Even though some of the fat in Salmon is Omega 3 fattie acids (which are good for your LD cholesterol)it is still the fattiest fish you can get :( How about some Cod or Orange Roughy or even Snapper, white fish tend to be lower in fat.
2- Margarine actually has the same properties as butter when it comes to fat. Get this.... margarine IS lower in fat than butter until they hydrogenize it to make it solid. After that it is just as bad as butter. You know why the french are somewhat healthier than us? Because at the dinner table they dip their bread in oil instead of smearing it with butter. Liquid fats are healthier than solids...remember that. (p.s. it has to be liquid at room temp....no melting crisco and calling it healthy! :P)
3- The yolks (which make Hollandaise) contain the protein...which (duh) contain some fat.
4- Teriyaki contains a lot of sugar (its basically sweet condensed soy sauce with fish sauce and other flavors) And you know all that sugar gets converted to carbs which then turn to fat.
Sorry honey but thats what you get for having a prof. chef for a friend! :P ynaaaaa
