Diet Journal Entry The Firstetheth

Tonight's menu -

Smoked grilled salmon fillet (Balsamic vinegar and roasted garlic marinade I got from Tyler Florence on Food Network)

Smoked grilled scallops (Teriyaki and honey marinade)

Don't know the exact fat content, but I'll lay odds it's pretty minimal.

Broccoli with hollandaise (Probably the only item with any real fat content, but the "butter" used is lite margarine with calcium)

Think about picking up a couple copies of Cooking Light magazine. it's got some good low-fat recipes that concentrate on maximizing flavor. for example, it suggests using butter where you'll taste it most, i.e. at the end of the recipe rather than cooking with it. Future-Mum-In-Law got me a subscription to it for xmas and i've gotten about 1 good recipe out of each magazine. please note, however, that it does tend more to the outré cuisines requiring somewhat difficult to find ingredients.
